Peanut Butter Banana Bread Bars

A fun twist on your typical banana bread!

  • 1 9x9 pan

Ingredients
 
 

  • 1 cup all-purpose flour
  • 1 cup oats, pulsed
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ cup unsalted butter
  • ½ cup sugar
  • ¼ cup brown sugar
  • ½ cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 medium bananas, mashed
  • 1 cup chocolate chips
  • ½ cup pecans, chopped
  • ½ cup shredded coconut, sweetened

Instructions
 

  • Preheat the oven to 350℉ and prepare the pan (grease and flour or line with parchment paper).
  • Mix together the flour, oats, baking powder, baking soda, salt, and cinnamon.
  • In a separate bowl, cream the butter, sugars, and peanut butter. Add the egg and vanilla, and mix until combined.
  • Add the mashed banana and mix just until combined.
  • Add the flour mixture to the wet batter in a couple additions, and mix until combined.
  • Fold in most of the chocolate chips, pecans and shredded coconut (reserving a little of each to decorate the top).
  • Pour into prepared pan and bake for approximately 40-45 minutes or until toasty brown on top and toothpick/tester comes out clean.
