Strawberry Shortcake
Fresh strawberries by themselves are one of the best treats of the summer. Add warm biscuits and some homemade whipped cream and you have yourself the perfect dessert (or breakfast!). Strawberry season is short, so run to the farmers market and make yourself some biscuits and fresh whipped cream!

Step 1 – Wash and cut up some strawberries (at least a pint or two!). Then sprinkle a tablespoon of powdered sugar on them and stir. The amount of sugar is really to your taste. If you prefer your strawberries to be a bit on the sugary/syrupy side, add a bit more!

Step 2: Make the biscuits!

Step 3: Whip up some whipped cream and make a cute little plate!

Simple, easy, and one of the best summer treats!
Ingredients
For the Strawberries
- 4 cups strawberries, washed and cut up
- 2 tbsp confectioners sugar
For the Biscuits
- 2 ¼ cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1 tsp salt
- 7 tbsp unsalted butter, cubed (and cold!)
- 1 tbsp unsalted butter, melted
For the Whipped Cream
- 1 cup heavy cream
- 2 tbsp confectioners sugar
- 1 tsp vanilla extract
Instructions
For the Strawberries
- Wash, dry and cut up the strawberries to the size you like.
- Coat strawberries with light dusting of confectioners sugar (or more if you prefer them to be a bit more sugary/syrupy), mix together and and set aside.
For the Biscuits
- Preheat oven to 350℉.
- Sift together the flour, sugar, baking powder and salt.
- Toss the cubes of butter in the flour mixture and cut in using a pastry blender or a fork or your (clean) fingers.
- Stir in the cream (or milk if you’re feeling dainty or that's all you have), and knead the dough lightly to bring it together.
- Pat dough out to about 3/4 inch thick. Dust your biscuit cutter (or the top of a water glass) with a little flour. Press down through the dough and straight back up (don’t twist it!).
- Brush the tops of the biscuits with the melted butter.
- Bake for about 15 minutes or until they turn golden brown on top.
For the Whipped Cream
- While the biscuits are in the oven, beat the heavy cream until it starts to thicken. Then add the confectioners sugar and beat to combine, and then the vanilla and beat until you hit your desired consistency. The amount of sugar is really to your individual taste, so after you've added some do a little taste test until it tastes sweet enough for you!
