Peanut Butter Banana Bread Bars
This recipe is for the people who make banana bread all the time and want to mix it up a bit!

These are like monster cookies in the form of soft and delicious bars! Lots of oats and bananas and peanut butter so kind of healthy as well! Perfect for breakfast or an afternoon treat.


Peanut Butter Banana Bread Bars
A fun twist on your typical banana bread!
Equipment
- 1 9×9 pan
Ingredients
- 1 cup all-purpose flour
- 1 cup oats, pulsed
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon
- ½ cup unsalted butter
- ½ cup sugar
- ¼ cup brown sugar
- ½ cup creamy peanut butter
- 1 large egg
- 1 tsp vanilla extract
- 2 medium bananas, mashed
- 1 cup chocolate chips
- ½ cup pecans, chopped
- ½ cup shredded coconut, sweetened
Instructions
- Preheat the oven to 350℉ and prepare the pan (grease and flour or line with parchment paper).
- Mix together the flour, oats, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, cream the butter, sugars, and peanut butter. Add the egg and vanilla, and mix until combined.
- Add the mashed banana and mix just until combined.
- Add the flour mixture to the wet batter in a couple additions, and mix until combined.
- Fold in most of the chocolate chips, pecans and shredded coconut (reserving a little of each to decorate the top).
- Pour into prepared pan and bake for approximately 40-45 minutes or until toasty brown on top and toothpick/tester comes out clean.
