Equipment
- 1 8×8 pan 9×9 could also work!
Ingredients
Peanut Butter Swirl
- ¾ cup creamy peanut butter – not the kind with separated oil (at room temperature, or soften in the microwave)
- 2 ½ tbsp salted butter, melted
- ¼ tsp vanilla extract
- ⅓ cup confectioners sugar
Brownie Layer
- 1 cup bittersweet chocolate (60-70%), chopped
- 12 tbsp salted butter
- 1 ⅓ cups sugar
- 1 ½ tsp vanilla extract
- 3 large eggs
- 1 cup all purpose flour
- 1 tbsp cocoa powder
- 1 tsp baking powder
Instructions
- Preheat oven to 350°F. Butter or spray a 9-inch square pan, or line with parchment paper.
For the Peanut Butter Swirl
- Mix together the peanut butter, melted butter, vanilla extract, and confectioners sugar. Set aside.
For the Brownie Layer
- In a separate bowl, melt the chocolate and butter (in the microwave or on the stove). Whisk in the sugar, then the vanilla and the eggs (one at a time). Sift together the flour, cocoa powder, and baking powder, and mix into the chocolate mixture just until combined.
To Assemble
- Pour 3⁄4 of the brownie mixture into the prepared pan and spread to the corners. Drop spoonfuls of the peanut butter mixture onto the brownie mixture, leaving a little space in between and pushing down slightly. Spoon dollops of the remaining brownie mixture amongst the spoonfuls of peanut butter mixture. Swirl together using a butter knife.
- If you like, sprinkle a few extra chocolate chunks over the top.
- Bake for about 40 minutes or until a tester comes out with only a few moist crumbs on it.
