The Best Banana Bread
The name speaks for itself – perfect consistency, flavor, and of course some chocolate chips!
Equipment
- 1 9-by-5-inch loaf pan
Ingredients
- 4 medium bananas, mashed
- 2 large eggs
- ¾ cup brown sugar
- ¼ cup maple syrup, at room temperature
- ½ cup plain greek yogurt, at room temperature
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp cinnamon
- ½ tsp salt
- 1 cup chocolate chips (optional)
- rough sugar for decorating (optional)
Instructions
- Preheat oven to 350℉ / 176℃. Lightly grease a 9-by-5-inch loaf pan or line with parchment paper.
- Beat together (or mix by hand) the mashed bananas, eggs, brown sugar, maple syrup, yogurt, melted butter and vanilla until only small lumps remain.
- Stir together dry ingredients in a separate bowl and then mix into banana mixture just until combined. Add in chocolate chips if using, and pour into prepared pan. Dot the top with chocolate chips and sprinkle with rough sugar.
- Bake for about 60 minutes, or until a toothpick inserted into center comes out clean.
- Let cool in pan for 10 minutes, then turn out onto wire rack and let cool completely before wrapping tightly for storage.
